Pickled Beets
Old-school sweet-and-sour pickled beets with onions, mustard seed, and celery seed steeping in a tangy vinegar brine. A jewel-toned side that perks up any deli plate.

Cook and peel beets.
When you can stick a fork into beet easily, it is done.
After peeled, slice in 1/4-inch slices.
Set aside.
