Heat water and butter to boiling point in saucepan.
Mix in flour at once.
Stir constantly until mixture leaves side of pan and forms into a ball, about 1 minute.
Beat eggs one at a time, beating until smooth after each addition.
Whip mixture until velvety.
Drop by level teaspoonful in small mound on lightly greased cookie sheet.
Bake in hot 400Β° oven about 20 minutes. Cool puffs and split to fill with chicken salad or your favorite sandwich filling.
Yields about 40.
