Pete's Blueberry Muffins
Pete'S Blueberry Muffins is an moderately easy dinner. Made with 1 stick butter, at room temperature, 1 c. sugar, 2 large eggs, 1 tsp. vanilla and 2 tsp. baking powder, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Heat oven to 375Β°.
Grease a muffin pan or use foil baking cups.
In a medium size bowl, beat butter until creamy.
Beat in sugar until fluffy and pale.
Beat in eggs, one at a time.
Beat in vanilla, baking powder and salt.
Mix mashed blueberries into batter.
Fold in half of flour, then half the milk.
Add remaining flour and milk.
Fold in remaining blueberries.
