Pepperoni Zucchini Casserole
Pepperoni Zucchini Casserole is an moderately easy dinner. Made with 4 c. zucchini, peeled, seeded and chopped, 1/2 c. chopped onion, 2 c. mozzarella cheese, shredded, 2 tbsp. parmesan cheese, grated and 1/2 to 1 c. pepperoni (small chunks), this recipe delivers authentic, satisfying flavors. Preheat oven to 350Β°.
Spray a 9 x 13-inch baking dish with Pam; set aside.
In a large bowl, combine zucchini, onion, cheeses, pepperoni and spices.
Mix thoroughly and set aside.
In another bowl, combine oil, eggs and Bisquick.
Mix well.
Add to zucchini mixture and blend thoroughly.
