Pepper Steak
Pepper Steak is an impressive dinner. Made with 1 1/2 lb. round steak (1/2-inch thick), 1 c. sliced onion, 1 c. beef broth, 2 stalks celery, chopped and 1 tbsp. salt, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Cut round steak into thin strips and brown in Dutch oven in small amount of oil and margarine.
Add beef broth, onion, celery, salt, garlic and ginger; simmer, covered, for 35 to 40 minutes, or until tender.
Add green peppers, mushrooms and tomatoes; cook an additional 10 minutes.
Mix soy sauce and cornstarch in 1 cup water until smooth.
Slowly stir into sauce and cook, stirring constantly, until thickened.
Serve over rice.
