Pepper Relish
Pepper Relish is an moderately easy dinner. Made with 12 large green mango peppers, 12 large red mango peppers, 15 large white onions, 1 1/2 pt. vinegar and 1 1/2 c. sugar, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Chop or grind peppers and onions. Cover with boiling water and let stand 5 minutes. Drain and cover again with boiling water. Let stand for 10 minutes.
Drain once more.
Add all other ingredients. Mix well and seal in hot, sterilized jars.
Heat in a slow oven for 45 minutes.
