Pepper Relish
Pepper Relish is an moderately easy dinner. Made with 24 medium sweet green peppers, cored and seeded, 24 medium sweet red peppers, cored and seeded, 18 hot peppers, cored and seeded, 24 medium onions and 1 qt. vinegar, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Put peppers and onions through medium blade of meat grinder. Turn into a large bowl.
Cover with boiling water and let stand 5 minutes.
Drain well and turn into a large pot.
Add vinegar, sugar and salt.
Bring to a full rolling boil.
Boil over medium heat for 10 minutes.
Pour into hot sterilized jars and seal at once.
Makes about 8 pints.
