Pepper Muffins
Pepper Muffins is an moderately easy dinner. Made with 1/2 c. butter, 1/3 c. green onion, chopped, 1/3 c. red bell pepper, finely chopped, 1/2 c. green bell pepper, finely chopped and 2/3 c. sour cream, this recipe delivers authentic, satisfying flavors. Preheat oven to 400°.
Grease muffin cups.
Melt butter in skillet with onion and peppers; cook until tender about 7 minutes, stirring often.
Cool to lukewarm.
Whisk sour cream and eggs in medium bowl.
Stir in cooled onion mixture.
Combine flour, sugar, baking powder, salt, soda in large bowl.
Make well in center.
Add sour cream mixture, stirring just until blended.
Fill muffin cups 3/4 full.
Bake at 400° for 20 to 25 minutes.
