Pepper Jelly
Pepper Jelly is an moderately easy dinner. Made with 1 1/2 c. cider vinegar, 1 1/2 c. chopped bell peppers (red or green), a few drops green or red food coloring, 1 (6 oz.) bottle liquid fruit pectin and 5 c. sugar, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

In a saucepan, boil vinegar and sugar.
Add peppers.
Boil again, stirring constantly.
Remove from heat and stir in fruit pectin and food coloring.
Pour into hot sterilized jars and seal. This makes 6 cups.
