Penne Pasta Casserole
Penne Pasta Casserole is an moderately easy dinner. Made with 1/2 bunch fresh broccoli, chopped, 1/2 sweet red pepper, cut in strips, 1 c. julienned carrots, 2 zucchini, thinly sliced garlic and olive oil, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Cook pasta; rinse and set aside.
Saute vegetables in lots of garlic and a little olive oil.
When just tender, add pesto and mix well.
Then mix vegetables, pasta and Ricotta together.
Pour into a 9 x 13-inch baking dish.
Top with Mozzarella.
Cover and bake at 350Β° for about 45 minutes or until hot throughout and cheese is melted.
