Peg's Chicken Croquettes
Peg'S Chicken Croquettes is an moderately easy dinner. Made with 4 chicken breasts, cooked and shredded, 1 onion, 2 stalks celery, 2 to 4 c. bread crumbs and 1/2 can cream of mushroom soup, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Cook chicken and shred. Saute onions and celery in butter until tender; add to chicken.
Also add bread crumbs, soup and enough flour to form into 1 1/2-inch croquette balls.
Roll in remaining bread crumbs.
Fry in deep oil for 2 to 3 minutes. Drain on paper towel. Serve hot with sauce.
