Peanut Butter Icebox Cookies
Peanut Butter Icebox Cookies is an moderately easy dinner. Made with 2 1/2 c. sifted flour, 3/4 tsp. soda, 1/4 tsp. salt, 3/4 c. shortening and 1 c. sugar, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Sift together flour, soda and salt.
Cream shortening until light.
Add sugar slowly, gradually beating after each addition. Add brown sugar and blend peanut butter in well.
Add well beaten eggs.
Add dry ingredients a little at a time beating until smooth after each addition.
Form into two rolls.
Wrap in wax paper.
Let stand in refrigerator several hours.
Slice thin and bake 8 to 10 minutes at 425Β°.
Makes 5 dozen cookies.
