Peachy Pecan Bread
Peachy Pecan Bread is an moderately easy dinner. Made with 1 (16 oz.) can sliced peaches, 6 tbsp. oleo, melted, 2 eggs, 1 tbsp. lemon juice and 2 c. flour, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Drain peaches, reserving 1/4 cup syrup.
Finely chop 1 cup peaches.
In blender combine remaining peaches, oleo, eggs, reserved peach juice and lemon juice.
Cover and blend until smooth.
Stir together dry ingredients.
Add egg mixture; stir until moistened.
Fold in reserved peaches and nuts.
Bake in a greased 8 x 4 x 2-inch loaf pan at 350Β° for 1 hour.
Spread with peach preserves.
Cool in pan at least 10 minutes.
