Pasta Fagoli
Pasta Fagoli is an impressive dinner. Made with 1 lb. ground beef, lean, 1 c. onion, diced, 1 c. carrot, julienned, 1 c. celery, chopped and 2 garlic cloves, minced, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Brown beef in large stew pot.
Drain.
Add onion, carrot, celery and garlic.
Simmer 10 minutes.
Add remaining ingredients, except pasta.
Simmer 50 minutes, stirring occasionally.
In separate pan, put water on to boil.
Cook pasta 10 minutes.
Drain and add noodles to the soup, cook together 5 or more minutes to let the flavor blend into the pasta.
