Paella Salad
Paella Salad is an moderately easy dinner. Made with 2 whole boneless chicken breasts, cut in strips, 1 lb. shrimp, shelled and deveined, 2 tbsp. salad, 1 large clove garlic, minced and 1 medium onion, chopped, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

In large skillet, cook chicken and shrimp in oil until tender; remove and set aside.
Add onion and garlic.
Cook until onion is tender.
Add Carolina rice; stir until opaque.
Add saffron, broth and lemon juice.
Cover and simmer 20 minutes until rice is tender.
Add chicken and shrimp.
Chill several hours.
Serve on green.
Garnish with olives, avocado and tomatoes.
Makes 6 servings.
