Oyster Confetti Rice
Oyster Confetti Rice is an impressive dinner. Made with 1 can whole oysters (8 oz.), 1/2 lb. pork, boned and sliced thin, 1 tbsp. vegetable oil, 1 medium green pepper, diced and 1 small onion, diced, this recipe delivers authentic, satisfying flavors. Drain oysters; reserve 1 tablespoon liquid.
Brown pork in oil.
Add green pepper, onion and garlic.
Saute.
Add reserved oyster liquid and remaining ingredients except zucchini.
Cover and simmer 30 minutes.
Add zucchini, then oysters.
Heat through and serve.
