Oyster Chowder
Oyster Chowder is an moderately easy dinner. Made with 1 (15 1/2 oz.) can oysters (fresh or frozen), 1/4 c. margarine, melted, 1/2 c. chopped onions, 1/2 c. chopped celery and 3 c. oyster liquid and enough milk to make volume, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Oysters, if frozen.
Drain, reserving liquid. Remove any shell particles.
Onion and celery in margarine until tender.
Oyster liquid, half and half, potatoes, corn, salt and pepper.
Stirring occasionally. Add oysters and heat for
3 to 5 minutes longer or until edges of oysters begin to curl.
Not let chowder boil.
Garnish with chopped parsley. Makes 6 servings.
