Overnight Salad
Overnight Salad is an moderately easy dinner. Made with 1 egg, 2 tbsp. lemon juice, 2 tbsp. sugar, 1/2 c. heavy cream, whipped and 1 large orange, diced, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Beat the egg until light and lemon colored.
Add lemon juice and sugar and cook in top of a double boiler over hot water until thick and smooth, stirring constantly.
Remove from the heat and cool.
Add fruit and marshmallows; fold in the cream.
Turn into individual molds, first rinsed with cold water.
Chill overnight. Unmold on lettuce.
Serve with a small amount of the whipped cream topped with a maraschino cherry.
