Oven Stew is an moderately easy dinner. Made with 1 1/4 to 1 1/2 lb. cubed (raw) beef, 1 1/2 c. each: carrots, potatoes and cubed onions, 1/2 c. cut up celery, salt and pepper to taste and 1 medium can v-8 vegetable juice, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

👨‍🍳 Instructions

Spread beef in bottom of large casserole dish or roaster.

Salt and pepper meat.

Cover with vegetables.

Pour the V-8 vegetable juice over all.

Add water to cover meat and vegetables.

Mix tapioca and sugar.

Sprinkle over top and "puddle" to moisten it. Cover and place in a 325° to 350° oven.

Bake about 5 hours. Frozen peas added the last 1/2 hour will add color and flavor.

Be sure to leave "head" room in pan for bubbling.
