Oven Spanish Rice
Oven Spanish Rice is an moderately easy dinner. Made with 1/2 c. chopped onion, 1/2 c. chopped green pepper, 2 tbsp. shortening or salad oil, 1 envelope spaghetti sauce mix and 2 (1 lb.) cans tomatoes (4 c.), this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

In saucepan, cook onion and green pepper in shortening or salad oil until tender, but not brown; stir in spaghetti sauce mix, tomatoes, uncooked rice, salt and water.
Simmer 10 minutes, stirring frequently.
Pour into a greased 1 1/2-quart casserole; cover and bake in moderate oven at 350Β° for 30 minutes or until rice is done.
Sprinkle with shredded sharp cheese.
