Oven Omelette is an moderately easy dinner. Made with 1/2 lb. bacon, coarsely chopped, 4 green onions, sliced, 1/2 lb. mushrooms, sliced, 3 tbsp. green pepper, chopped and 8 eggs, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Fry bacon until brown; drain.

Saute onions, mushrooms and green pepper.

Beat eggs with milk and salt.

Stir in bacon, onion, mushrooms, green pepper, 2 cups Monterey Jack and 1/2 cup Cheddar cheese.

Pour in greased 2-quart baking dish.

Can be covered at this point and refrigerated overnight, if desired.

Bake, uncovered, at 350Β° for 35 to 40 minutes, until set and lightly browned.

When almost done, sprinkle with remaining cheese.

If you choose to refrigerate, allow extra time for baking.
