Oven Fried Zucchini
Oven Fried Zucchini is an moderately easy dinner. Made with 2 (8 oz.) zucchini, 1/4 tsp. pepper, 1/2 tsp. salt, 1 tbsp. water and 1 egg or 1/2 c. egg substitute, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Trim zucchini and cut into sticks about the size of French fries.
Sprinkle with salt and pepper.
Beat egg in water.
Roll each zucchini stick in egg mixture, then in crumbs.
Place on a wire rack while oven heats to 400Β°.
Place baking sheets under the wire racks and spoon margarine over coated zucchini sticks.
Bake 15 to 20 minutes, until tender and lightly browned.
Serve immediately.
Good with fish and sliced tomatoes.
