Oven Fried Catfish
Oven Fried Catfish is an easy dinner. Made with catfish fillets, 1 pkg. cornbread mix, low-fat mayonnaise, onion powder and paprika, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Line cookie sheet with foil and spray with Pam (or other cooking spray).
Preheat broiler with rack 4 inches from heat.
On waxed paper, cover fillets on both sides with mayonnaise (1 tablespoon per 2 fillets).
Roll in dry cornbread mix, covering well.
Liberally sprinkle with onion powder and dust with paprika. Spray tops of fillets with Pam.
Broil until fish flakes easily, 10 to 15 minutes.
