Out Of This World Eggplant is an moderately easy dinner. Made with 1 medium eggplant, peeled and cubed, 2 eggs, beaten, 1 small onion, chopped, salt and pepper to taste and 1/4 c. milk, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Boil eggplant until tender; drain and mash.
Add eggs, onion, salt, pepper, milk, crumbs and butter.
Mix well and pour into buttered casserole.
