Orange Sponge Cake
Orange Sponge Cake is an moderately easy dinner. Made with 4 well beaten egg yolks, 1 1/2 c. sugar, 1/2 c. orange juice, 1 1/2 c. cake flour and 1/4 tsp. salt, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Beat yolks until thick and lemon colored; add sugar gradually and 2 tablespoons of juice.
Blend well.
Add remaining juice alternately with sifted dry ingredients, mixing until smooth after each addition.
Fold in stiffly beaten egg whites.
Bake in 9-inch ungreased tube pan in slow oven, 325Β°, for 1 hour.
Invert pan to cool.
Cover cake with boiled frosting and sprinkle grated rind of 1 orange over frosting before it sets.
