Orange Refrigerator Cookies
Orange Refrigerator Cookies is an impressive dinner. Made with 2 3/4 c. sifted flour, 1/2 tsp. salt, 1/4 tsp. soda, 1/4 tsp. baking powder and 1/2 c. soft shortening, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
Sift dry ingredients together.
Into large bowl of mixer, place shortening, butter, sugars and egg.
Beat on #7 speed for 2 minutes.
Add juice, orange rind, lemon extract, pecans and the sifted dry ingredients.
Beat on #1 speed about 1 minute.
Scrape bowl while beating.
Shape into rolls and wrap in waxed paper. Chill several hours.
Slice thin with a sharp knife and bake on greased cookie sheet for 12 minutes at 350Β°.
Makes 5 dozen cookies.
I always double this recipe and freeze extra rolls for later.
