Orange Raisin Cake
Orange Raisin Cake is an moderately easy dinner. Made with 1/2 c. butter, 3/4 c. sugar, 2 eggs (at room temperature), 1 tsp. grated orange rind and juice of 1 orange (at room temperature), this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
In a large bowl, cream the butter with sugar.
Add eggs.
Beat. Place orange juice in a cup.
Fill with milk until it measures 1 cup.
Add milk, orange juice and rind to mixture.
Beat until smooth.
In another bowl, blend flour, baking powder, salt and raisins.
Add gradually to butter mixture.
Beat until smooth. Pour in a greased 9 x 9 x 2-inch baking pan.
Bake at 375Β° for 30 minutes or until golden brown.
Sprinkle with confectioners sugar (optional).
