Orange Praline Yams Casserole
Orange Praline Yams Casserole is an moderately easy dinner. Made with 5 lb. canned yams, drained, 2/3 c. orange juice, 1 tbsp. grated orange peel, 5 tbsp. brandy and 2 tsp. salt, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

In a mixing bowl with electric mixer, beat yams until smooth. Add orange juice and peel, brandy, salt, pepper to taste, ginger, 1/4 cup melted butter, 1/3 cup brown sugar and egg yolks, beating until mixture is light and fluffy.
Pour into buttered shallow 2-quart casserole.
In a small bowl combine remaining melted butter, remaining brown sugar, pecans and cinnamon.
Spread evenly over yams (at this point casserole may be refrigerated overnight). Bake at 350Β° for 45 to 50 minutes or until golden brown and bubbly.
Let stand 10 minutes before serving.
