Onion Shortcake
Onion Shortcake is an moderately easy dinner. Made with 1 large spanish onion, 1/4 c. butter, 1 1/2 corn muffin mix (jiffy), 1 egg, beaten and 1/3 c. milk, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Slice onion into rings and cook slowly in butter until transparent.
Combine corn mix, egg, milk and corn.
Pour into buttered 8-inch square pan.
Add sour cream, salt and 1/2 the cheese to onion.
Mix well and spread evenly over corn batter. Sprinkle with remaining cheese.
Bake at 425Β° for 30 minutes. Serve hot.
