One Dish Village Chicken
One Dish Village Chicken is an easy dinner. Made with 4 to 6 skinless, boneless chicken breasts, 2 standard size pkg. chicken flavored rice mix or 2 pkg. broccoli rice au gratin, 1 pkg. sliced low-fat, low sodium swiss or alpine lace cheese, 1/2 to 3/4 c. italian seasoned bread crumbs and 1 few pats butter (optional), this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Cook the rice as directed on package, but stop cooking 3 minutes earlier than instructed so rice mixture will not become dry.
Spread the rice on the bottom of a lightly oiled 9 x 13-inch baking pan.
Place the chicken breasts on top of the rice.
Cover chicken with cheese, then sprinkle with bread crumbs.
Bake in a 325Β° oven for 25 minutes or until chicken is done and bread crumbs are slightly brown and crisp.
If desired, melted butter may be added part-way through the baking process to add crispness to the bread crumbs.
Serves 4 to 6.
