Old Fashioned Light Fruit Cake
Old Fashioned Light Fruit Cake is an moderately easy dinner. Made with 24 oz. (6 c.) unchopped pecans, 12 oz. whole candied cherries, 1/2 lb. soft butter, 2 1/4 c. sugar and 1 oz. brandy flavoring, this recipe delivers authentic, satisfying flavors. Mix butter and sugar until creamed.
Add eggs, one at the time, beating after each addition until yolk is broken.
Then add flavoring.
Sift flour, salt, nutmeg and cinnamon together.
Add to sugar mixture gradually.
Work in nuts and fruit with a heavy spoon.
Pour into prepared pans filling 2/3 full.
Bake at 275Β°, tube pan about 3 hours, 9 x 5 x 3-inch loaf pans about 2 hours.
