Spread bread and raisins in 8-inch square baking dish.

Whisk 2 cups milk, 2 tablespoons brown sugar and salt in bowl.

Pour over bread.

Let stand 15 minutes.

Turn bread over once.

Whisk remaining milk, the egg, egg whites, vanilla, granulated sugar, cinnamon and nutmeg.

Pour over bread. Sprinkle remaining brown sugar on top.

Place pan in larger pan and add water to come halfway up on smaller pan.

Bake until knife inserted in center comes out clean.

Remove from water and let cool 15 minutes before serving.
