Okra Stew
Okra Stew is an moderately easy dinner. Made with 2 large onions, chopped, 1/4 c. butter or oil, 1 lb. stew beef or lamb, cubed, 2 tsp. salt and 1 tsp. turmeric, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.
Saute onions in butter.
Add meat, salt and turmeric and brown over medium heat 10 minutes.
Cut off both ends of washed and dried okra and slice into 4 or 5 pieces.
Place meat and onion mixture, okra, potatoes, tomatoes and water in a pot.
Bring to a boil; reduce heat to medium-low, cover and simmer 30 to 40 minutes or until meat is tender (can be done quicker in pressure cooker; reduce water to 1 cup and cook 15 to 20 minutes or until meat is tender.)
Add lemon juice.
Simmer 5 minutes more.
Serve over rice.
