Okra Croquettes
Okra Croquettes is an moderately easy dinner. Made with 2 c. finely chopped raw okra, 1/4 c. finely chopped onion, 1 egg, 1 tbsp. flour and 3 tbsp. corn meal, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Combine okra, onion, flour, cornmeal, salt and pepper.
Beat egg slightly and add to okra mixture.
Mix well.
Heat cooking oil in skillet (I use safflower oil).
Drop okra from a tablespoon in hot oil.
Flatten with a pancake turner.
Cook about 3 minutes on each side.
Drain on paper towels.
Serves 6.
