Oatmeal Wafers
Oatmeal Wafers is an moderately easy dinner. Made with 1 1/2 c. rolled oats, 1/2 c. sifted all-purpose flour, 1/4 c. firmly packed light brown sugar, 1/2 tsp. ground cinnamon and 1/8 tsp. salt, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Heat oven to 375Β°.
Lightly grease 2 baking sheets; set aside. In a medium bowl mix first 5 ingredients; set aside.
In a small saucepan or skillet melt margarine over moderate heat.
Add margarine, maple syrup and vanilla to dry ingredients; mix well. Drop dough by tablespoonfuls onto baking sheets, spacing cookies about 2 inches apart.
Pat each cookie down lightly to form 1/2 inch thick rounds.
Bake for 8 minutes or until lightly browned. Remove cookies from oven and let harden on baking sheets for 2 minutes before transferring to wire racks to cool.
