Oatmeal Toffee Cookies
Oatmeal Toffee Cookies is an moderately easy dinner. Made with 1 c. (2 sticks) butter or margarine, softened, 2 eggs, 2 c. lightly packed brown sugar, 2 tsp. vanilla and 1 3/4 c. all-purpose flour, this recipe delivers authentic, satisfying flavors. Heat oven to 375Β°. Lightly grease cookie sheet or use parchment paper.
Beat butter, eggs, brown sugar and vanilla extract until well blended.
Add flour, baking soda, cinnamon and salt.
Beat until blended.
Stir in oats and brickle with a spoon.
Drop dough by rounded teaspoon about 2-inches apart onto prepared sheet.
Bake 8 to 10 minutes or until edges are lightly browned.
Remove to wire rack.
Makes about 4 dozen (large) cookies.
