Put rack in center of oven.
Heat oven to 350Β°.
Lightly grease baking sheet.
Cream butter or margarine and sugar with an electric mixer or food processor fitted with a metal blade.
Add egg and vanilla.
Mix until smooth.
Add flour, baking soda, salt and oats.
Mix until just combined.
Stir in cranberries and apricots.
Drop batter by tablespoon onto a prepared baking sheet, spacing cookies 2 1/2-inches apart.
(They spread considerably.) Bake until cookies are a medium brown, about 11 minutes.
Let cool 1 minute on cookie sheet.
Use metal spatula to transfer to wire rack to cool completely.
