Norwegian Betasuppe
Norwegian Betasuppe is an moderately easy dinner. Made with 1 lb. yellow split peas, 1 lb. ham hocks or 1/2 c. finely chopped ham, 1 onion, finely chopped, 1 tbsp. thyme and 10 c. water, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Combine peas, ham hocks or ham, onion, thyme and water.
Add potatoes, rutabaga, celery root, leek and salt.
Combine ingredients in a large Dutch oven and simmer for 1 1/2 to 2 hours. Add vegies and salt and cook for another 30 to 45 minutes.
If using ham hocks, remove, trim, cut finely and return to the soup!
