My Mom's Biscotti
My Mom'S Biscotti is an moderately easy dinner. Made with 3 eggs, 1 c. sugar, 1/2 c. margarine, melted & cooled, 2 c. flour and 2 tsp. baking powder, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Beat eggs and sugar.
Add cooled margarine, anise and vanilla extracts. In separate bowl, mix together flour, baking powder, salt, almonds and cherries.
Add to creamed mixture. Shape into 2 logs and place on cookie sheet.
Bake 25 mins. at 375Β°. Remove from oven and slice into one inch slices and toast on both sides. Yields about 4 dozen.
