My Barrister'S Favorite Carrot Cake is an moderately easy dinner. Made with 1 1/2 c. oil, 3 eggs, 2 c. all-purpose flour, 2 tsp. baking soda and 1 (7 oz.) pkg. flaked coconut, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

In large bowl, combine oil, sugar, eggs and vanilla.
In separate bowl, sift flour, cinnamon, baking soda and salt.
Add flour mixture to oil-sugar-eggs-vanilla mixture and blend well. Stir in coconut, carrots, pineapple and nuts.
Pour into greased/floured 13 x 9 x 2-inch pan.
Bake at 350Β° for 50 to 60 minutes until center of cake is firm to the touch.
Cool in pan. Frost with cream cheese frosting.
