Mustard Pickles
Mustard Pickles is an moderately easy dinner you can prepare in about 2 hours 6 minutes. Made with c. green tomatoes, chopped, c. onions, chopped and large green and red bell peppers, chopped, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Combine tomatoes and onions; add 3 tablespoons salt. Add enough cold water cover.
Separate container add 1 1/2 tablespoons salt and enough cold water cover the peppers. Let each pan set to 12 hours. Drain vegetables and rinse well.
Combine green tomatoes, onions and peppers in large pot and add enough water to cover.
Bring to a boil for 10 minutes (onions should be clear, but not mushy).
Drain; set aside to cool.
