Muffins
Muffins is an moderately easy dinner. Made with 2 c. pastry flour, 3 tsp. baking powder, 1/2 tsp. salt, 2 eggs and 2 tbsp. sugar, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Mix and sift dry ingredients.
Beat eggs until light; add milk and butter and add to flour mixture all at once.
Stir only enough to dampen flour.
Drop by spoonfuls into buttered muffin pans and bake 15 to 20 minutes in a 400Β° oven.
If you wish berry muffins, reserve 1/4 cup of the flour; use to dredge 1 cup blueberries and add to mixture.
