Mother's Salmon Croquettes
Mother'S Salmon Croquettes is an easy dinner. Made with 15 oz. can salmon, 1/8 c. cornmeal, 1 egg and 2 tbsp. shortening, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Put salmon in large bowl.
Remove all bones.
Add egg and meal.
Mix well.
Put shortening in skillet and let it melt while mixing the salmon.
Form patties (will make 12 small or 8 large). Fry golden brown on each side at medium heat.
Drain on a paper towel before serving.
