Mother's Relish Mold
Mother'S Relish Mold is an moderately easy dinner. Made with 1 pkg. cherry gelatin, dissolved in 1 c. hot water, 1 (9 oz.) can crushed pineapple, 1 c. fresh ground cranberries, 1 small unpeeled orange, remove seeds and grind orange and 1 c. chopped celery, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Drain pineapple.
Reserve syrup and add water to make 1/2 cup liquid.
Dissolve gelatin and sugar in the hot water.
Add pineapple syrup and lemon juice.
Chill until partially set.
Add fruits, celery and nuts.
Chill in 5-cup ring mold or a pretty glass bowl overnight.
Of course, you won't need to unmold the relish from the glass bowl.
Individual molds are good if you prefer.
Yield
8 to 10 servings.
Excellent served with cornmeal dressing instead of cranberry sauce.
