Moravian Sugar Cake
Moravian Sugar Cake is an moderately easy dinner. Made with 1 c. hot mashed, dry and not seasoned potatoes, 1 c. granulated sugar, 1 cake or pkg. yeast, dissolved in 1 c. lukewarm water, 3/4 c. melted shortening (1/2 c. butter, 1/4 c. lard) and 1 tsp. salt, this recipe delivers authentic, satisfying flavors. Mix in order and then stir in 4 1/4 cups flour.
Cover with a towel or ventilated lid and place in warm place, free from draft, to rise, no more than 3 to 4 hours.
Early the next morning, divide dough into 3 or 4 well-greased pans (square).
Cover and let rise again for at least 1 hour.
Make holes in the cake dough into which a piece of very cold butter is pressed.
Add light brown sugar to butter holes.
Over all, sprinkle more light brown sugar and bake 20 to 25 minutes in a 350Β° oven.
