Mom's Pecan Puffs
Mom'S Pecan Puffs is an moderately easy dinner. Made with 1/2 c. butter or margarine, 2 tbsp. sugar, 1 tsp. vanilla, 1 c. pecans, ground (measure, then grind using blender) and 1 c. flour, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Beat butter until soft.
Add 2 tablespoons sugar and blend until creamy.
Add vanilla.
Mix flour and pecans.
Stir into butter mixture.
Roll into small balls.
Place on a greased baking sheet.
Bake in a slow oven, 300Β°, for about 45 minutes.
While hot, roll the puffs in confectioners sugar.
When cool, roll again.
(I use a paper bag and carefully shake them in the sugar.) Makes 32 (1 1/2-inch) balls.
