Mom's French Chef Meat Loaf
Mom'S French Chef Meat Loaf is an moderately easy dinner. Made with 2 thin 2-inch slices pork, fried (can omit), 2 tbsp. minced onion, 2 lb. ground beef, 1/2 c. minute tapioca and 2 1/2 tsp. salt (can omit), this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Fry out the salt pork.
Add onion and cook until golden brown. Add pork and onion to other ingredients.
Mix thoroughly.
Bake in loaf pan in hot oven (450°) for 15 minutes, then decrease heat to moderate (350°) and bake for 30 minutes longer, or until done.
Or, microwave on High for 20- to 25 minutes, or until done.
Serve hot or cold.
This is a very good, juicy meat loaf, not dry.
