Molded Beet Aspic
Molded Beet Aspic is an moderately easy dinner. Made with 3 oz. lemon gelatin, 1 1/2 c. hot water, 3/4 c. beet liquid, 1/4 tsp. salt and 2 to 3 tbsp. vinegar, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Dissolve gelatin in water.
Mix in all ingredients, except beets and celery.
Chill until partially set.
Add vegetables; chill until firm.
Serves 6 (makes 1 quart).
