Mock Apricot Jam
Mock Apricot Jam is an easy dinner. Made with 6 to 7 zucchini (fresh), peeled and grated (6 c.), 6 c. sugar, 1/4 c. lemon concentrate, 1 (20 oz.) can crushed pineapple and 2 small pkg. apricot flavor jell-o, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Simmer the zucchini for 10 minutes.
Add sugar, lemon concentrate, crushed pineapple and Jell-O mix.
Cook until sugar is dissolved.
Put in sterilized jars and cover with melted wax.
