Mini Pecan Muffins
Mini Pecan Muffins is an easy dinner. Made with 1 c. packed brown sugar, 1/2 c. all-purpose flour, 1 c. chopped pecans, 2/3 c. melted butter (no substitutes) and 2 eggs, beaten, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Set oven to 350°. Combine brown sugar, flour and pecans.
Combine butter and eggs; mix well.
Stir into flour mixture just until moistened.
Fill greased or paper-lined miniature muffin cups 2/3 full.
Bake at 350° for 10 to 20 minutes or until muffins test done. (Mine get done in about 11 to 12 minutes; ovens vary.) Do not overcook.
Remove to wire rack to cool.
Yields approximately 2 1/2 dozen.
